Zuppa pavese is a simple northern Italian broth soup with toasted bread, egg and Parmesan. The hot broth cooks the egg right in the bowl.

Serves: 4 people

Preparation time: 12 min

Ingredients

  • vegetable stock – 4 cups
  • country bread – 4 thick slices
  • butter – 1 1/2 tbsp
  • eggs – 4
  • grated Parmesan – 2/3 cup
  • salt – to taste
  • black pepper – to taste
  • fresh parsley, chopped – 1 tbsp

Method

1. Bring the stock to a boil and keep it gently hot.
2. Butter the bread and toast it until golden in a skillet or under the broiler.
3. Place one slice of bread in each bowl and sprinkle with Parmesan.
4. Crack an egg over the bread in each bowl.
5. Carefully pour the hot broth into the bowls so the egg white sets while the yolk stays soft.
6. Season with pepper, a little salt and parsley, and serve immediately.
