Chewy udon noodles, vegetables and a savoury sauce make this Japanese stir-fry ideal for a busy evening.

Ingredients
- udon noodles – 400 g
- sesame oil – 1 tbsp
- onion – 1
- cabbage – 150 g
- carrot – 1
- soy sauce – 2 tbsp
- mirin – 1 tbsp
- spring onions – 2
Method
STEP 1
Prepare the udon noodles following the packet instructions and loosen them well so they do not clump.
STEP 2
Heat the sesame oil in a wok and stir-fry the onion, cabbage and carrot until just tender but still lively.
STEP 3
Add the udon noodles and toss so they start to warm through.
STEP 4
Pour in the soy sauce and mirin and keep tossing until the noodles are glossy and hot.
STEP 5
Taste and check whether the noodles need a touch more soy.
STEP 6
Finish with sliced spring onions and serve straight away.
