Wonton soup pairs delicate dumplings with a light, aromatic broth. It feels refined while still being very approachable.

Ingredients
- wonton wrappers – 20
- ground pork – 9 oz
- green onions, finely chopped – 2
- ginger, grated – 1 tsp
- soy sauce – 2 tsp
- sesame oil – 1 tsp
- chicken stock – 6 cups
- bok choy, roughly chopped – 5 oz
- salt – 1/4 tsp
- white pepper – 1/4 tsp
Method
1. Mix the pork with 1 chopped green onion, the ginger, 1 teaspoon of the soy sauce, the sesame oil and the white pepper.
2. Place a small amount of filling on each wrapper and fold the wontons closed. Seal the edges with a little water.
3. Bring the stock to a boil with the remaining soy sauce and the salt. Add the wontons and simmer for 4 minutes.
4. Add the bok choy and cook for 2 more minutes.
5. Serve the soup with the remaining green onion scattered over it.
