Irish white pudding has the same love-it-or-hate-it energy as many old butcher’s dishes. Pan-fried with mushrooms, it becomes earthy, crisp and deeply savoury.

Ingredients
- White pudding slices – 500 g
- Mushrooms – 300 g
- Butter – 30 g
- Black pepper – 1 tsp
- Parsley – 1 tbsp
- Bread – to serve
Method
Pan-fry the white pudding until crisp on both sides. Cook the mushrooms in butter and season generously with black pepper. Serve together with parsley and bread.
