White Chocolate Berry Fondue

Sweet white chocolate becomes fresher and more elegant with lemon zest and lots of juicy berries for dipping.

Serves: 6 people

Preparation time: 5 min

Ingredients

  • White chocolate – 400 g
  • Double cream – 220 ml
  • Lemon zest – 1 lemon
  • Vanilla extract – 1 tsp
  • Raspberries – 250 g
  • Blueberries – 200 g
  • Pineapple chunks – 300 g
  • Shortbread fingers – 200 g

Method

Prepare all fruit, cake, cookies or marshmallows before you start the fondue so everything is ready to dip as soon as the sauce is smooth.
Place the main ingredients in a heatproof bowl over barely simmering water, or melt them very gently in a heavy saucepan. Melt the chocolate gently and stir in the cream, lemon zest and vanilla so the fondue stays bright instead of cloying.
Stir until the mixture is completely smooth and glossy. If it looks too thick, add a small splash of cream or milk; if it is too thin, let it reduce for a minute.
Pour the white chocolate berry fondue into a fondue pot or warm serving bowl and keep it just warm enough to stay fluid without scorching.
Serve straight away with the prepared dippers and stir from time to time so the white chocolate berry fondue stays silky.
