Sweet roasted pepper filled with whipped feta is salty, creamy and bright, with the kind of flavour that invites a second round.
Serves: 6 people

Ingredients
- Roasted red peppers – 2
- Feta – 150 g
- Greek yogurt – 2 tbsp
- Olive oil – 1 tbsp
- Lemon juice – 1 tsp
- Oregano – 1/2 tsp
Method
STEP 1
Cut the roasted peppers into small squares or strips that can be folded into little cups.
STEP 2
Blend or mash the feta with yogurt, olive oil and lemon juice until creamy.
STEP 3
Fold or shape the pepper pieces into small cups on a platter.
STEP 4
Pipe or spoon the whipped feta into each cup.
STEP 5
Finish with oregano and serve chilled or at cool room temperature.
