This warm Mustard Herb Potato Salad is all about potatoes absorbing flavour while they are warm or lukewarm. That makes the salad deeper and keeps the dressing from sitting only on the outside.

Why dress the potatoes while they are warm?

A good potato salad starts with the right texture. The potatoes should be tender but not falling apart. Add the dressing while they are still slightly warm so the flavour can soak in.

Ingredients

  • Baby potatoes – 800 g
  • Shallot – 2
  • Whole grain mustard – 2 tbsp
  • Apple cider vinegar – 2 tbsp
  • Olive oil – 3 tbsp
  • Chives – 2 tbsp
  • Dill – 2 tbsp
  • Parsley – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Boil the potatoes until tender, then halve them while still warm.
STEP 2
Whisk shallot, mustard, vinegar and olive oil into a dressing.
STEP 3
Toss the warm potatoes with the dressing so they soak it up.
STEP 4
Add chives, dill and parsley. Season to taste and serve warm or warm-room temperature.
