A simple mix of carrots, peas and beans finished with butter.

Ingredients
- carrots – 3
- green beans – 10 oz
- peas – 1 cup
- butter – 2 tbsp
- parsley – 1 tbsp, chopped
- salt – to taste
- black pepper – to taste
Method
1. Slice the carrots and trim the beans.
2. Cook the carrots and beans until just tender, adding the peas for the last few minutes.
3. Drain well.
4. Toss the vegetables with the butter and parsley.
5. Season with salt and pepper.
6. Serve hot.
