Crisp salad, warm rounds of goat cheese and a raspberry dressing make this starter feel bright, generous and just a little bit festive.

Ingredients
- Soft goat cheese log – 400 g
- White bread – 3 slices
- Olive oil – 2 tbsp
- Fresh thyme – 2 sprigs
- Honey – 4 tbsp
- Raspberries – 20
- Raspberry vinegar – 30 ml
- Dijon mustard – 1 tbsp
- Shallot – 1
- Mixed salad leaves – 150 g
- Olive oil for dressing – 70 ml
- Salt and black pepper – to taste
Method
1. Blitz or crumble the bread into coarse crumbs, moisten with a little olive oil and toast briefly until golden.
2. Slice the goat cheese into thick rounds, top with thyme and a little honey, then warm in the oven until just soft.
3. Blend or crush the raspberries with the vinegar, mustard, shallot and olive oil into a vivid dressing.
4. Arrange the salad leaves on plates, add the warm goat cheese, scatter over the crumbs and spoon over the raspberry dressing just before serving.
