A classic warm salad with creamy goat cheese, crisp bacon lardons, crunchy nuts and a glossy honey dressing that makes it both comforting and elegant.

Ingredients
- Soft goat cheese medallions – 6
- Smoked bacon lardons – 125 g
- Mixed salad leaves – 150 g
- Walnuts, roughly chopped – 40 g
- Cherry tomatoes, halved – 12
- Cucumber, sliced – 1/3
- Olive oil – 2 tbsp
- Runny honey – 1.5 tbsp
- White wine vinegar – 1 tbsp
- Wholegrain mustard – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STAP 1
Fry the bacon lardons in a dry pan until crisp. Lift them out and let them drain on kitchen paper.
STAP 2
Whisk olive oil, honey, vinegar, mustard, salt and pepper into a smooth dressing.
STAP 3
Briefly warm the goat cheese for 5 to 6 minutes in a preheated oven at 180°C so it softens without collapsing.
STAP 4
Arrange the salad leaves, tomatoes and cucumber on plates. Spoon over the bacon lardons and walnuts.
STAP 5
Place the warm goat cheese on top and finish with the honey dressing.
