A simple Belgian brasserie-style dessert of warm sour cherries in syrup served over vanilla ice cream with a spoonful of whipped cream.
Serves: 4 people

Ingredients
- jarred sour cherries in syrup – 2 cups
- cornstarch – 1 tbsp
- water – 2 tbsp
- ground cinnamon – 1/4 tsp
- vanilla ice cream – 8 scoops
- heavy cream – 1 cup
- powdered sugar – 2 tbsp
- almond flakes, toasted – 2 tbsp
Method
1. Pour the sour cherries and their syrup into a saucepan and bring gently to a simmer.
2. Stir the cornstarch with the water until smooth and add it to the cherries. Simmer briefly until the syrup thickens slightly. Stir in the cinnamon.
3. Whip the cream with the powdered sugar until softly whipped.
4. Place two scoops of vanilla ice cream in each bowl and spoon the warm cherries over the top.
5. Finish with whipped cream and toasted almond flakes, then serve immediately.
