Warm butternut salad with lentils and goat cheese is a vegetarian meal salad that is hearty, fresh and creamy at once.
Why use lentils in a warm salad?
Lentils make a salad more nourishing and give it an earthy base. With warm butternut and goat cheese, the dish looks light but still feels satisfying.

Ingredients
- butternut squash – 1 small, peeled and cubed
- cooked green lentils – 2 cups
- soft goat cheese – 4 oz
- arugula – 3 cups
- red onion – 1 small, sliced thin
- olive oil – 2 tbsp
- red wine vinegar – 1 tbsp
- mustard – 1 tsp
- walnuts – 1/3 cup, chopped
- salt – to taste
- black pepper – to taste
Method
STEP 1
Roast the butternut at 400°F with 1 tablespoon olive oil, salt and black pepper for 25 minutes until tender.
STEP 2
Whisk the remaining olive oil with the vinegar and mustard into a simple dressing.
STEP 3
Arrange the arugula, lentils and red onion on a platter. Top with the warm butternut.
STEP 4
Scatter over the goat cheese and walnuts, drizzle with the dressing and serve slightly warm.
