A lighter Vietnamese filling of carrot, leek, bean sprouts, herbs and vermicelli makes these loempias easy to serve as a starter, snack or buffet item.

Ingredients
- Spring roll wrappers – 20
- Egg white – 1
- Sunflower oil – for frying
- Carrot – 1
- Leek – 1
- Bean sprouts – 100 g
- Coriander – 2 sprigs
- Mint – 2 sprigs
- Vermicelli – 100 g
- Salt and black pepper – to taste
- Sweet chilli sauce – to serve
Method
1. Prepare the vermicelli according to the packet and cut it into shorter strands.
2. Slice the carrot and leek finely and mix them with the bean sprouts, chopped coriander and mint.
3. Fold in the vermicelli, season lightly, then wrap portions in the loempia sheets and seal with egg white.
4. Fry until crisp and serve with sweet chilli sauce.
