Vietnamese pork loempias

These Vietnamese-style loempias keep the filling simple: pork, spring onion, chilli, bean sprouts and just enough honey and sesame oil to round everything out.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Spring roll wrappers – 20
  • Egg white – 1
  • Sunflower oil – for frying
  • Pork loin or pork chop – 250 g
  • Spring onions – 2
  • Red chilli – 1
  • Garlic – 1 clove
  • Bean sprouts – 100 g
  • Honey – 1 tbsp
  • Sesame oil – 1 dash
  • Salt and black pepper – to taste
  • Sweet chilli sauce – to serve

Method

1. Cut the pork into very fine strips and fry it briefly with spring onion, chilli and garlic.
2. Let the meat cool, then mix in the bean sprouts, honey, a dash of sesame oil, salt and pepper.
3. Roll small portions of filling into the wrappers, seal the ends with egg white and shape them tightly.
4. Fry until crisp and golden and serve with sweet chilli sauce.
