Sweet-spicy tempeh, peanut-sauced vegetables, tofu and pickles prove that a meatless nasi rames can still feel wonderfully abundant.

Ingredients
- Cooked rice – 600 g
- Tempeh orek – 350 g
- Gado-gado vegetables – 400 g
- Peanut sauce – 200 ml
- Acar pickles – 120 g
- Tofu cubes – 200 g
- Fried shallots – 2 tbsp
Method
Cook the rice and pan-fry or bake the tofu cubes until golden.
Blanch the vegetables and warm the peanut sauce separately.
Arrange the rice, tempeh orek, tofu, vegetables and pickles on plates.
Spoon the peanut sauce over the vegetables, add fried shallots and serve.
