Vega Poke Bowl with Sesame Mayonnaise

Brown rice, crisp greens, avocado and pomegranate make this bowl bright and satisfying, while sesame mayonnaise gives it a creamy finish.

Serves: 4 people

Ingredients

  • Brown rice – 300 g
  • Sugar snaps – 200 g
  • Cucumber – 1
  • Radishes – 8
  • Avocados – 2
  • Edamame – 150 g
  • Pomegranate seeds – 200 g
  • Mayonnaise – 4 tbsp
  • Sesame oil – 1 tbsp
  • Sesame seeds – 1 tbsp
  • Rice vinegar – 2 tbsp
  • Soy sauce – 2 tbsp

Method

STEP 1
Cook the brown rice and leave it to cool until just lukewarm or completely cold, depending on how you prefer your bowl.

STEP 2
Trim the sugar snaps and blanch them for a minute so they keep their crunch but lose their raw edge. Slice the cucumber and radishes, and halve or slice the avocado.

STEP 3
In a small bowl mix the mayonnaise with the sesame oil and a splash of rice vinegar until smooth. Taste it before adding salt, because the soy dressing will bring plenty of seasoning later.

STEP 4
Season the rice lightly with soy sauce and the remaining rice vinegar. Divide it over four bowls, then arrange the sugar snaps, cucumber, radishes, avocado, edamame and pomegranate on top.

STEP 5
Drizzle the sesame mayonnaise over everything and scatter the sesame seeds across the bowls just before serving.
