This vanilla Christmas log proves that a festive dessert does not need dark chocolate to feel luxurious. The rolled sponge and glossy vanilla buttercream create a smooth, old-school finish that feels both celebratory and comforting.

Ingredients
- Eggs – 4
- Sugar – 120 g
- Flour – 80 g
- Cornstarch – 40 g
- Baking powder – 1 tsp
- Vanilla sugar – 1 sachet
- Butter – 250 g
- Egg – 1
- Egg yolk – 1
- Sugar – 150 g
- Water – 5 cl
- Vanilla extract – 1 tbsp
- Powdered sugar – for finishing
Method
Whisk the egg yolks with the sugar until thick, then fold in the flour, cornstarch and baking powder.
Whip the egg whites separately and fold them into the batter to keep the sponge light.
Bake the sponge briefly, then turn it out, brush lightly with sweetened water and roll it up while still warm.
For the buttercream, cook the sugar with water to a syrup, whisk it into the egg and yolk mixture, then beat in the butter and vanilla until silky.
Unroll the sponge, spread over part of the vanilla buttercream and roll it up tightly again.
Cover the outside with a second layer of buttercream and draw fine bark-like lines with a fork if you want a traditional look.
Chill until firm and finish with a little icing sugar before serving.
