Matoke gives this Ugandan vegetable soup body and a mild earthy flavor that works beautifully with tomato and broth.
Serves: 4 people

Ingredients
- olive oil – 1 tbsp
- onion – 1 large, chopped
- garlic – 3 cloves, minced
- tomatoes – 3, diced
- carrots – 2, diced
- green plantains – 3, peeled and cut into chunks
- vegetable stock – 6 cups
- ground cumin – 1 tsp
- spinach – 5 oz
- salt – to taste
- black pepper – to taste
- parsley – 2 tbsp, chopped
Method
Step 1
Heat the oil in a soup pot and cook the onion for 4 minutes. Add the garlic, tomatoes, and carrots and cook for 3 more minutes.
Step 2
Add the green plantains, vegetable stock, and cumin and bring the soup to a boil.
Step 3
Simmer for 25 minutes until the plantains and carrots are tender.
Step 4
Mash some of the plantains against the side of the pot for a fuller texture, then stir in the spinach.
Step 5
Season with salt and black pepper and finish with parsley.
