A creamy Turkish yogurt soup with rice, mint and a gentle buttery finish.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • rice – 1/2 cup
  • water or stock – 6 cups
  • plain yogurt – 1 cup
  • egg yolk – 1
  • flour – 1 tbsp
  • butter – 1 tbsp
  • dried mint – 1 tbsp
  • salt – to taste
  • black pepper – to taste

Method

1. Cook the rice in the water or stock until very tender.
2. Whisk the yogurt with the egg yolk and flour until smooth.
3. Add a ladle of hot broth to the yogurt mixture, then stir it gradually into the soup.
4. Warm the soup gently so it thickens slightly, but do not let it boil hard.
5. Melt the butter with the mint, pour it over the soup and season with salt and black pepper.
