A comforting Turkish chicken soup with vermicelli, tomato and lemon.
Serves: 4 people

Ingredients
- olive oil – 1 tbsp
- onion, chopped – 1
- tomato paste – 1 tbsp
- chicken stock – 6 cups
- cooked chicken, shredded – 2 cups
- vermicelli – 1/2 cup
- lemon juice – 1 tbsp
- parsley, chopped – 2 tbsp
- salt – to taste
- black pepper – to taste
Method
1. Heat the olive oil and cook the onion until soft, then stir in the tomato paste.
2. Add the chicken stock and bring to a simmer.
3. Stir in the shredded chicken and vermicelli and cook until the pasta is tender.
4. Season the soup with lemon juice, salt and black pepper.
5. Finish with parsley and serve hot.
