Turkish-style ezogelin soup

Ezogelin is a Turkish red lentil soup enriched with bulgur, rice and tomato. It is thick, warming and gently spiced with dried mint and paprika.

Serves: 4 people

Preparation time: 35 min

Ingredients

  • olive oil – 1 tbsp
  • onion, chopped – 1 medium
  • garlic clove, chopped – 1
  • red lentils, rinsed – 1 cup
  • fine bulgur – 1/4 cup
  • rice – 1/4 cup
  • tomato paste – 1 tbsp
  • paprika paste or extra tomato paste – 1 tbsp
  • dried mint – 1 tsp
  • paprika – 1 tsp
  • vegetable stock or water – 7 cups
  • salt – to taste
  • black pepper – to taste
  • lemon wedges – for serving

Method

1. Heat the olive oil in a pot and cook the onion and garlic until soft.
2. Add the lentils, bulgur, rice, tomato paste, paprika paste, dried mint and paprika and stir well.
3. Pour in the stock or water and simmer until the lentils, bulgur and rice are all tender.
4. Blend the soup lightly if you want a smoother texture, or leave it rustic.
5. Season with salt and pepper and serve with lemon wedges.
