Tuna Tataki with Ponzu

A lightly seared, jewel-like tuna dish with ponzu and radish: clean, elegant and exactly the kind of plate that signals modern fine dining.

Serves: 4 people

Ingredients

  • Sashimi-grade tuna loin – 500 g
  • Neutral oil – 1 tbsp
  • Ponzu sauce – 80 ml
  • Daikon radish – 150 g
  • Spring onions – 2
  • Sesame seeds – 1 tsp
  • Microgreens – 1 handful

Method

Sear the tuna very briefly on all sides in a smoking-hot pan, then chill and slice thinly. Arrange on plates with shredded daikon and spoon over ponzu. Finish with spring onion, sesame and microgreens.
