A lightly seared, jewel-like tuna dish with ponzu and radish: clean, elegant and exactly the kind of plate that signals modern fine dining.

Ingredients
- Sashimi-grade tuna loin – 500 g
- Neutral oil – 1 tbsp
- Ponzu sauce – 80 ml
- Daikon radish – 150 g
- Spring onions – 2
- Sesame seeds – 1 tsp
- Microgreens – 1 handful
Method
Sear the tuna very briefly on all sides in a smoking-hot pan, then chill and slice thinly. Arrange on plates with shredded daikon and spoon over ponzu. Finish with spring onion, sesame and microgreens.
