Tuna tartare with avocado cream

Fresh tuna tartare needs very little besides sharp lime, a touch of shallot and silky avocado cream. Clean flavours, elegant texture.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • Fresh tuna – 300 g
  • Granny Smith apple – 1
  • Shallot – 1
  • Lime – 1
  • Sesame oil – 1 tsp
  • Avocado – 1
  • Baby spinach – 1 handful
  • Mayonnaise – 2 tbsp
  • Watercress or chervil – a few sprigs
  • Salt and black pepper – to taste

Method

1. Dice the tuna very finely with a sharp knife so it keeps structure rather than turning mushy.
2. Mix with finely chopped apple, shallot, lime zest and juice, and a little sesame oil.
3. Blend the avocado with spinach, mayonnaise and a squeeze of lime into a smooth cream.
4. Spoon or ring-mould the tartare onto plates, add the avocado cream and finish with watercress or chervil for a fresh herbal note.
