A tuna melt is comfort food with a practical side: pantry ingredients, quick assembly and a bubbling cheese top that turns a humble tuna sandwich into a proper hot lunch.

Ingredients
- Canned tuna in water or oil, drained – 2 cans
- Mayonnaise – 4 tbsp
- Spring onions, finely sliced – 2
- Lemon juice – 1 tsp
- Cheddar or mature cheese, grated – 150 g
- Thick bread slices – 8
- Black pepper – to taste
Method
1. Mix the drained tuna with mayonnaise, spring onions, lemon juice and black pepper.
2. Toast the bread lightly first if you want extra structure. This helps prevent the middle from becoming soggy.
3. Divide the tuna mixture over four slices of bread and spread it neatly to the edges.
4. Scatter the grated cheese on top and place under a hot grill until the cheese bubbles and colors lightly.
5. Close with the remaining bread slices or serve open-faced, depending on how you prefer it.
