Tuna fennel and rocket grain bowl

A quick Mediterranean grain bowl with tuna, fennel, rocket and lemon.

Serves: 2 people

Preparation time: 15 min

Ingredients

  • cooked grains – 250 g
  • tinned tuna – 1 tin
  • fennel – 1 small bulb
  • rocket – handful
  • lemon – 1
  • olive oil – 2 tbsp

Method

STEP 1
Finely slice the fennel, then toss it with the rocket, olive oil, lemon zest and lemon juice. Very thin fennel keeps the bowl crisp and fresh instead of bulky.
STEP 2
Warm the grains according to the package instructions and drain the tuna if needed, keeping it in large flakes.
STEP 3
Spread the grains into bowls, top with the fennel salad and tuna, then finish with mint if using. Serve straight away while the grains are warm and the salad is still bright.
