Fast, fresh and wonderfully satisfying, this hand roll combines silky tuna and creamy avocado in crisp nori for an easy sushi-night favourite.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 2
- Sashimi-grade tuna – 160 g
- Avocado – 1
- Sesame seeds – 1 tbsp
Method
Season the rice and cool slightly. Cut the nori in half, add a small mound of rice to each piece and top with tuna strips, avocado and sesame. Roll into cones just before serving so the nori stays crisp.
