A classic spring starter: tender white asparagus with ham, chopped egg, parsley and warm butter. Simple ingredients, but the result feels ceremonial every time.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • White asparagus – 28 spears
  • Floury potatoes – 12 small
  • Eggs – 4
  • Cooked ham – 500 g
  • Butter – 200 g
  • Parsley – 1 bunch
  • Mace or nutmeg – 1 tsp
  • Salt and black pepper – to taste

Method

1. Peel the asparagus generously and cook them gently until tender. Keep them warm in their cooking liquid.
2. Boil the potatoes and eggs separately. Chop the eggs finely and mix with chopped parsley.
3. Warm the ham briefly and melt the butter slowly until it turns clear and golden.
4. Arrange the asparagus on warm plates with the potatoes and ham, spoon over the chopped egg mixture and finish with warm butter and black pepper.
