This simple Australian bush bread proves how good a loaf can be with almost nothing in it: just flour, butter, water and salt, baked until crusty outside and tender in the middle.

Serves: 8 people

Preparation time: 35 min

Ingredients

  • Self-raising flour – 450 g
  • Salt – pinch
  • Butter – 80 g
  • Water – 185 ml

Method

1. Preheat the oven to 200°C and line a baking tray with baking paper.
2. Combine the flour and salt in a bowl. Rub in the chilled butter with your fingertips until the mixture looks like coarse breadcrumbs.
3. Add the water and mix with a knife until the dough just comes together. Bring it together gently with your hands, adding only a splash more water if it feels too dry.
4. Turn the dough onto a lightly floured bench, knead very briefly until smooth and shape it into a thick round.
5. Mark the top into wedges with a floured knife, dust lightly with flour and bake for about 30 minutes until the loaf sounds hollow when tapped underneath. Let it cool for a few minutes before serving warm.
