Tomatoes filled with grey shrimp

A cold Belgian starter of ripe tomatoes filled with a creamy grey shrimp salad.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • large tomatoes – 4
  • grey shrimp – 10 oz
  • mayonnaise – 1/2 cup
  • lemon juice – 2 tsp
  • parsley – 1 tbsp, chopped
  • chives – 1 tbsp, chopped
  • black pepper – to taste
  • lettuce – a few leaves for serving

Method

1. Cut a lid from each tomato and scoop out the seeds and pulp. Turn the tomatoes upside down on kitchen paper to drain.
2. Mix the shrimp with the mayonnaise, lemon juice, parsley, chives and black pepper.
3. Fill the tomatoes generously with the shrimp mixture.
4. Chill for at least 20 minutes so the filling firms up slightly.
5. Arrange on lettuce leaves.
6. Serve cold as a starter.
