Fresh tomato sambal is juicy, bright and just hot enough to wake up milder dishes without overwhelming the whole table.

Ingredients
- Tomatoes – 3
- Red chilies – 3
- Shallot – 2
- Garlic – 1 clove
- Lime juice – 1 tbsp
- Salt – 1/2 tsp
- Sugar – 1/2 tsp
Method
Chop the tomatoes, chilies, shallots and garlic very finely or pulse them briefly in a processor.
Mix the chopped vegetables in a bowl.
Season with lime juice, salt and sugar and stir well.
Let the sambal stand for 10 minutes before serving so the flavors blend.
