Tomato bruschetta

Italian toasted bread topped with juicy tomatoes, basil and olive oil.

Serves: 2 people

Preparation time: 15 min

Ingredients

  • ciabatta – 1 small loaf
  • ripe tomatoes – 4
  • garlic – 1 clove
  • basil – handful
  • olive oil – 3 tbsp
  • balsamic vinegar – 1 tsp

Method

STEP 1
Cut the tomatoes into small pieces and mix them in a bowl with the garlic, basil, olive oil and balsamic. Season and leave the mixture to stand for a little while if you can. Even 10 to 15 minutes helps the tomatoes release their juices and deepen the flavour.
STEP 2
Slice the bread and toast it on both sides until crisp at the edges but still slightly chewy in the middle.
STEP 3
Spoon the tomato mixture over the warm toast just before serving so the bread keeps some crunch.
