Serving soup in small cups is a smart coffee table idea: this smooth tomato basil soup is warming, bright and easy to combine with sandwiches and pastries.

Ingredients
- Onion – 1
- Garlic clove – 2
- Olive oil – 2 tbsp
- Canned tomatoes – 800 g
- Vegetable stock – 700 ml
- Tomato purée – 1 tbsp
- Sugar – 1 tsp
- Fresh basil – 15 g
- Cream – 60 ml
- Salt – to taste
- Black pepper – to taste
Method
Chop the onion and garlic. Heat the olive oil in a soup pot and sweat the onion for 5 minutes until soft. Add the garlic and tomato purée and cook briefly. Add the tomatoes, stock and sugar. Bring to a boil, lower the heat and simmer for 20 minutes. Add most of the basil and blend the soup until smooth. Stir in the cream and season with salt and pepper. Reheat gently and serve in small cups with a little extra basil on top.
