Sweet tomatoes, creamy burrata and a lively herb dressing give this starter a generous restaurant feel with very little complication.
Serves: 4 people

Ingredients
- Mixed ripe tomatoes – 600 g
- Burrata – 2 x 125 g
- Broad beans or green beans – 100 g
- Parsley – 2 tbsp
- Basil – 1 handful
- Olive oil – 4 tbsp
- White wine vinegar – 1 tbsp
- Shallot – 1 small
- Salt and black pepper – to taste
Method
1. Cut the tomatoes into mixed shapes and season them lightly with salt so they become extra juicy.
2. Blanch the broad beans briefly and peel them if needed.
3. Stir together the chopped herbs, finely minced shallot, olive oil and vinegar into a simple green dressing.
4. Arrange the tomatoes on plates, place the burrata in the centre, spoon over the beans and dressing and finish with black pepper.
