Bright, crunchy and full of pop, tobiko gunkan delivers playful texture and clean ocean flavour in neat one-bite sushi cups.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 2
- Tobiko – 100 g
- Chives – 1 tbsp
Method
Season the rice and let it cool. Cut the nori into narrow strips and wrap around small hand-shaped rice ovals. Spoon tobiko into each gunkan and finish with a little chopped chive for freshness.
