This tiramisu-style yule log brings together coffee, mascarpone and a rolled sponge for a dessert that feels familiar yet festive. It is creamy and elegant, with the gentle bitterness of coffee keeping the whole thing balanced.
Serves: 12 people
Ingredients
- Flour – 125 g
- Sugar – 80 g
- Baking powder – 1/2 sachet
- Butter – 100 g, melted
- Rhum – 1 tsp
- Eggs – 4
- Strong coffee – 20 cl
- Kirsch – 1 tsp
- Malibu – 1 tsp
- Mascarpone – 600 g total
- Icing sugar – 50 g
- Liquid coffee extract – 15 ml
- Unsweetened cocoa – for finishing
Method
Bake a light sponge with the eggs, sugar, flour, baking powder and melted butter, then roll it up in a damp towel while still warm.
Mix the strong coffee with the spirits to make a soaking syrup and let it cool.
Beat mascarpone into a creamy filling with part of the sugar and chill briefly so it firms up.
Unroll the sponge, brush it generously with the coffee syrup and spread over the mascarpone filling.
Roll it back up tightly and place it seam-side down on a tray.
Mix more mascarpone with icing sugar and coffee extract for the outer coating and spread it over the log.
Dust with cocoa and chill thoroughly before slicing.
