Thai green chicken curry

A fragrant coconut curry with chicken, green beans and herbs, naturally served with rice.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • Green curry paste – 2 tbsp
  • Coconut oil – 1 tbsp
  • Chicken thigh fillets – 500 g
  • Coconut milk – 400 ml
  • Chicken stock – 150 ml
  • Green beans – 200 g
  • Red bell pepper – 1
  • Fish sauce – 1 tbsp
  • Brown sugar – 1 tsp
  • Thai basil – 1 handful
  • Jasmine rice – 300 g

Method

STEP 1 Fry the curry paste briefly in coconut oil. Add the chicken and coat well.
STEP 2 Pour in coconut milk and stock and simmer for 10 minutes.
STEP 3 Add beans and pepper and cook until just tender. Season with fish sauce and sugar.
STEP 4 Finish with basil and serve with jasmine rice.
