A fragrant coconut curry with chicken, green beans and herbs, naturally served with rice.
Serves: 4 people
Preparation time: 15 min
Ingredients
- Green curry paste – 2 tbsp
- Coconut oil – 1 tbsp
- Chicken thigh fillets – 500 g
- Coconut milk – 400 ml
- Chicken stock – 150 ml
- Green beans – 200 g
- Red bell pepper – 1
- Fish sauce – 1 tbsp
- Brown sugar – 1 tsp
- Thai basil – 1 handful
- Jasmine rice – 300 g
Method
STEP 1 Fry the curry paste briefly in coconut oil. Add the chicken and coat well.
STEP 2 Pour in coconut milk and stock and simmer for 10 minutes.
STEP 3 Add beans and pepper and cook until just tender. Season with fish sauce and sugar.
STEP 4 Finish with basil and serve with jasmine rice.
