Boat noodle soup is dark, aromatic and full of beef, herbs and noodles in a concentrated Thai broth with sweet, sour and savoury balance.
Serves: 4 people

Ingredients
- beef steak, thinly sliced – 12 oz
- rice noodles – 10 oz
- beef stock – 8 cups
- dark soy sauce – 2 tbsp
- fish sauce – 2 tbsp
- brown sugar – 1 tbsp
- garlic, minced – 3 cloves
- star anise – 1
- bean sprouts – 2 cups
- Thai basil – 1 cup
- lime wedges – for serving
- scallions, sliced – 2
Method
1. Bring the stock to a simmer with the garlic, star anise, soy sauce, fish sauce and brown sugar.
2. Cook the rice noodles separately and divide them over bowls.
3. Drop the thin beef slices into the hot broth for 30 to 60 seconds until just cooked.
4. Add bean sprouts to the bowls and ladle over the broth and beef.
5. Finish with Thai basil, scallions and lime wedges.
