Pretty, polished and party-ready, these little hand-shaped sushi balls pair silky salmon with crisp green sweetness for an elegant bite.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Sashimi-grade salmon – 180 g
- Snap peas – 80 g
- Lemon juice – 1 tsp
Method
Blanch the snap peas briefly and slice thinly. Season the rice and shape it into small balls. Drape thin slices of salmon over the rice, top with snap peas and a few drops of lemon juice, then serve immediately.
