Hand rolls are playful, fresh and perfect for a casual sushi night. This vegetarian version is colourful, crunchy and easy to customise.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Avocado – 1
- Carrot – 1
- Radish sprouts – 50 g
- Soy sauce – to serve
Method
Cook and season the rice and cool. Cut the nori sheets in half. Place rice on each half-sheet, top with avocado, carrot and sprouts, then roll into cone-shaped hand rolls. Serve right away so the nori stays crisp.
