Flaky pastry topped with sweet butternut, tangy goat cheese and red onion makes a beautiful lunch or light dinner.
Serves: 4 people

Ingredients
- puff pastry – 1 sheet
- butternut squash – 1 lb, peeled and thinly sliced
- red onion – 1, thinly sliced
- olive oil – 2 tbsp
- soft goat cheese – 4 oz
- fresh thyme – 1 tbsp leaves
- egg – 1, beaten
- salt – to taste
- black pepper – to taste
Method
STEP 1
Heat the oven to 400°F. Lay the puff pastry on a lined baking tray and score a small border around the edge.
STEP 2
Toss the butternut and red onion with olive oil, thyme, salt and black pepper.
STEP 3
Arrange the vegetables over the pastry, staying inside the border, and dot with goat cheese.
STEP 4
Brush the border with beaten egg.
STEP 5
Bake for 30 minutes until the pastry is puffed and crisp and the butternut is tender.
