Tarator is a refreshing Bulgarian cold soup with cucumber, yogurt, dill and walnuts. It is light, creamy and especially welcome on hot days.
Serves: 4 people
Preparation time: 20 min
Ingredients
- full-fat yogurt – 3 cups
- cold water – 1 cup
- cucumbers, finely chopped – 2
- garlic, minced – 2 cloves
- dill, chopped – 3 tbsp
- walnuts, roughly chopped – 1/3 cup
- olive oil – 1 tbsp
- salt – 1/2 tsp
- black pepper – 1/4 tsp
Method
1. Whisk the yogurt with the cold water until smooth and pourable.
2. Add the cucumber, garlic, dill and walnuts and stir well.
3. Season the soup with olive oil, salt and pepper.
4. Chill for at least 20 minutes so the flavors can come together.
5. Serve ice-cold in small bowls or glasses.
