Fresh, colourful and satisfying, this vegan sushi roll pairs savoury tamari tofu with crisp vegetables for a clean and balanced bite.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Firm tofu – 200 g
- Tamari – 1 tbsp
- Cucumber – 1/2
- Carrot – 1
Method
Pat the tofu dry, sear it lightly and glaze with tamari; cool and cut into strips. Spread rice over nori, add tofu, cucumber and carrot, then roll tightly and slice into neat sushi pieces.
