Sweet-savory Japanese omelette laid over sushi rice makes a soft, nostalgic bite that balances richness and sweetness beautifully.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Eggs – 4
- Sugar – 1 tbsp
- Soy sauce – 1 tsp
- Mirin – 1 tsp
- Nori strips – 8
Method
Cook and season the sushi rice and cool.
Beat eggs with sugar, soy sauce and mirin. Cook into thin layers in a lightly oiled pan to form a Japanese omelet and cut into blocks.
Shape small nigiri mounds from the rice, top with omelet and secure with a strip of nori.
Serve at room temperature.
