Freekeh soup uses roasted green wheat for a nutty flavour and pleasant bite. This Syrian-style version is savoury, warming and excellent as a starter or a light supper.

Ingredients
- butter or olive oil – 1 tbsp
- onion, chopped – 1 medium
- freekeh, rinsed – 1 cup
- chicken stock – 7 cups
- cooked shredded chicken – 1 cup
- ground allspice – 1/4 tsp
- ground cinnamon – 1/4 tsp
- salt – to taste
- black pepper – to taste
- parsley, chopped – 2 tbsp
Method
1. Heat the butter or olive oil in a soup pot and cook the onion until soft.
2. Add the freekeh and stir for a minute so it becomes lightly coated with fat.
3. Pour in the chicken stock and simmer until the freekeh is tender.
4. Stir in the shredded chicken, allspice and cinnamon and warm through.
5. Season with salt and pepper and finish with parsley.
