Bündner barley soup is a classic Swiss alpine soup with pearl barley, vegetables and smoked bacon. It simmers down slowly and develops a full, rounded flavor.

Ingredients
- smoked bacon, diced – 7 oz
- onion, finely chopped – 1
- carrot, diced – 1
- celery stalk, diced – 1
- leek, sliced – 1
- pearl barley – 3/4 cup
- beef stock – 8 cups
- heavy cream – 1/3 cup
- parsley, chopped – 2 tbsp
- salt – 1 tsp
- black pepper – 1/2 tsp
Method
1. Cook the bacon in a soup pot for 4 minutes. Add the onion, carrot, celery and half of the leek and cook for 4 minutes more.
2. Stir in the pearl barley and pour in the stock.
3. Simmer the soup for 45 minutes until the barley is tender and the broth lightly thickened.
4. Add the remaining leek and the cream and warm through for 5 minutes.
5. Season with salt and pepper and sprinkle with parsley.
