A deli-style potato salad with sweet pickles, celery and a creamy sweet-tangy dressing.
Serves: 6 people
Preparation time: 20 min
Ingredients
- Potatoes – 1.2 kg
- Mayonnaise – 220 ml
- Sweet pickles – 4
- Pickle relish – 2 tbsp
- Celery – 2 stalks
- Onion – 1/2 small
- Apple cider vinegar – 1 tbsp
- Sugar – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Cook the potatoes until tender, then cool and dice them.
STEP 2
Mix mayonnaise, chopped sweet pickles, relish, celery, onion, vinegar and sugar.
STEP 3
Fold in the potatoes and chill until the flavours meld.
