Sweet corn chowder

This creamy American chowder with corn and potato is mellow, lightly sweet and very comforting. It is perfect for lunch or supper.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • butter – 2 tbsp
  • onion, finely chopped – 1
  • potatoes, small dice – 12 oz
  • corn kernels – 2 cups
  • vegetable stock – 4 cups
  • milk – 1 2/3 cups
  • heavy cream – 1/2 cup
  • all-purpose flour – 1 tbsp
  • celery stalk, finely chopped – 1
  • salt – 1/2 tsp
  • black pepper – 1/4 tsp
  • chives, chopped – 2 tbsp

Method

1. Melt the butter in a pot and cook the onion and celery for 4 minutes. Sprinkle in the flour and stir for 1 minute.
2. Add the potatoes, corn and stock. Bring to a boil and simmer for 15 minutes.
3. Pour in the milk and cream and heat gently for 5 more minutes.
4. Season with salt and pepper.
5. Serve with chives scattered over the top.
