Swedish yellow pea soup (Ärtsoppa)

Ärtsoppa is the classic Swedish yellow pea soup with smoked pork and mustard. It is hearty, rustic and ideal for cold days.

Serves: 6 people

Preparation time: 70 min

Ingredients

  • dried yellow split peas – 1.1 lb
  • water – 8 cups
  • smoked pork or ham hock meat – 14 oz
  • onion, chopped – 1 large
  • carrot, diced – 1
  • dried marjoram – 1 tsp
  • mustard – 2 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp

Method

1. Rinse the split peas and place them in a large pot with the water and smoked meat. Bring to a boil and simmer for 45 minutes.
2. Add the onion and carrot and continue simmering for 25 to 30 minutes until the peas break down.
3. Remove the meat, cut it into small pieces and return it to the soup.
4. Stir in the marjoram and mustard and season with salt and pepper.
5. Serve the pea soup piping hot.
