A southern German potato salad with stock, vinegar, mustard and a glossy dressing.

Serves: 4 people

Preparation time: 180 min

Ingredients

  • Waxy potatoes – 900 g
  • Vegetable stock – 250 ml
  • White wine vinegar – 60 ml
  • Mild mustard – 1 tbsp
  • Sunflower oil – 3 tbsp
  • Shallot – 1
  • Chives – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Boil the potatoes until tender and slice them while still warm.
STEP 2
Warm the stock with vinegar, mustard and shallot.
STEP 3
Pour over the potatoes and let them soak briefly.
STEP 4
Fold in the oil and chives. Season and serve lukewarm or chilled.
