A crisp roll piled with warm, spicy bakkeljauw is one of those Surinamese sandwiches that manages to be messy, sharp, savoury and completely irresistible at once.

Ingredients
- Salt cod – 500 g
- Onions – 2
- Garlic – 3 cloves
- Tomatoes – 2
- Tomato paste – 1 tbsp
- Celery – 5 sprigs
- Sunflower oil – 3 tbsp
- Hot pepper – to taste
- Sandwich rolls – 4
- Pickled cucumber – 1 small
- Black pepper – to taste
Method
Prepare the salt cod as for regular bakkeljauw: desalt it, flake it and cook it with onion, garlic, tomato paste, tomatoes and celery until the filling is juicy but not wet. Taste for heat and savouriness, because the bread softens the flavour slightly. Warm the rolls briefly in the oven so the crust becomes crisp and the inside stays soft. Split them open and spoon in the hot bakkeljauw generously. Add a little pickle or cucumber relish if you like a sharper finish, and serve immediately.
